ESI-MS analysis of IOS. ESI-MS analysis of (A) original IOS and (B) deacteylated IOS reveals that IOS were composed of the mixture of xylo-oligosaccharides (XOS) and gluco-oligosaccharides (GOS) with a degree of polymerization ranging from 7 to 16. XOS were found to be acetylated to a different extent, whereas GOS were not. To be consistent with the monosaccharidic composition of IOS (Figure 3B), the pentoses and hexoses detected by ESI-MS are referred to as Xyl and Glc, respectively.
