a Cell mass concentration during MtEG5A fermentation. Dry cell weight reached 40.1 g/lt after glycerol fed-batch phase and 110.82 g/lt at the end of the cultivation, corresponding to wet cell weight of 183.55 and 421.2 g/lt, respectively. b Protein concentration and endoglucanase activity detected in the culture medium during fermentation. At the end of fermentation, the amount of secreted protein reached 0.98 g, corresponding to enzyme activity of 6.3 U/mL. Protein concentration was determined using the BCA protein assay microplate procedure (Pierce Chemical Co., Rockford, IL), according to the manufacturer’s recommendations. Specific activity was tested against β-glucan 0.1% (w/v), pH 5.0, 60 °C in 100 mM phosphate–citrate buffer
