Production of N-Acetyl glucosamine (GlcNAc) by the fermentation supernatant of the chitinolytic enzymes expression strain A. niger FCN30. A Reaction mixtures containing 1% colloidal chitin as substrate in 50 mM phosphate–citrate buffer (pH 5.0) were incubated with the fermentation broth of FCN30 (left) and ATCC 20611 (right) at 50 ℃ for 24 h.
